This is a spicy, traditional, and colourful Mexican dish. This classic rice is based on Spanish rice, or Arroz Mexicano, or Arroz Rojo (which means red rice). This rice is made by browning rice in a large pan along with onions and garlic, then adding spices and vegetables to the hot pan. It is a one-pot meal.
Instructions for Making Mexican Rice
Long Basmati rice will be required. Run it under cold, running water to clean it. so that the starch will rinse properly and the rice will not be mushy and starchy. After rinsing, keep it aside for draining. We're shearing Mexican lime rice here.
Cooking time 25 mins
1 Onion - finely chopped,
5 Garlic - finely chopped,
1/4 cup chopped Coriander,
2 tbsp Oil - Refined,
200 g Rice - Long Basmati,
2 glass Vegetable Stock,
20 g Lime Juice,
Some Lemon wedges,
Salt as per taste,
Green Chili - Silted.
Heat the oil in a heavy based sauce pan,
Add the garlic and sauté it for 1 mins,
Add chopped onion and fry it for 2 mins,
Lower the heat,
Then add the rinse rice in the pan and stir it,
Cook for 2 mins,
Now add vegetable stock in it,
Add salt as per taste,
Put it on the high flame and bring the rice to boil for 4 mins,
Then reduce the flame to slow,
Now cover the pan & cook it for 20 mins,
Water should be absorbed by the rice,
Now open the covered rice,
Add lime juice and mix it well,
Add chili flakes or green chili (optional),
Sprinkle coriander leaf,
Serve it hot with lime wedges & chili pickle.
Note: cook the rice for 20 mins or until the rice grains looks tender and all liquids have been absorbed. Optionally - Mexican Spanish rice served with a side dish with lemon wedges & sprinkling of cilantro.
